Buckwheat Patties

Ingredients:

1 cup buckwheat
100 g/4 oz farmers cheese
2 eggs
1 tsp sugar
1/2 cup crushed breadcrumbs
1/2 tsp salt
2-3 tbsp butter or vegetable oil

Add buckwheat to 1 1/2 cup of boiling salted water and cook 30-35 minutes. When porridge is thickened, add passed through a sieve or meat grinder farmers cheese, eggs, and sugar and mix well. Form patties from the mix, coat them in breadcrumbs and fry on all sides until nicely browned.

Put sour cream on top of each patty when serving. These patties can be served with borstch or rassolnik.

Millet Patties

Ingredients:

2 cups millet
5 cups water or milk
1 tbsp sugar
1 tsp salt
1/2 cup crushed breadcrumbs
2-3 tbsp butter or vegetable oil

Add salt, sugar, and finely washed millet to boiling water and cook 15-20 minutes, stirring frequently.  Cover the pot and leave to sweat for 25-30 minutes.

Cool porridge and form patties with hands dipped in cold water. Coat patties in four or breadcrumbs and fry in butter. Serve with kissel, sour cream, butter, or milk sauce.

Rice Patties

Ingredients:

2 cups rice
5 cups water
1 tbsp sugar
1 tsp salt
1/2 cup breadcrumbs
2 tbsp butter or vegetable oil

Add washed rice to salted boiling water and cook 20-25 minutes, stirring from time to time. Cover the pot and leave thickened porridge to sweat/cool. Add sugar, and, if desired, eggs, mix well and form patties, coat in breadcrumbs and fry in butter. Serve rice patties with either sweet or mushroom sauce.
