Milk Soup with Barley


1 l/1 qt milk
4-5 tbsp pearl barley
1 tbsp butter
1 tsp sugar

Wash barley, cover with cold water and let soak for 2 hours. Drain the grain, cover with hot water and parboil for 10 minutes. Drain barley yet again, add to a pot with boiling milk, lower the heat and simmer 40-50 minutes. Season with salt, sugar, and butter, and serve.
