Tvorozhniki with Carrots (Cheese and Carrots Fritters)

Ingredients:

300 g/11 oz farmers cheese
500 g/1 lb 2 oz carrots
2 tbsp sugar
1/2 cup flour
1 egg
2 tbsp butter

Thinly cut washed and peeled carrots, put into a pot with 1/2 cup of water and 1/2 tbsp of butter. Cover the the pot and braise carrots checking from time to time to prevent burning. If all water boils out but the carrots are still hard — add 1-2 tbsp of water to the pot. All the water should be gone by the time carrots are cooked.

Rub carrots through a sieve , mix with creamed cheese, add 1/2 cup flour or farina, egg, sugar, salt, and mix well. Continue cooking following instructions in the “Tvorozhniki” recipe.

Tvorozhniki (Cheese Fritters)

Ingredients:

500 g/1 lb 2 oz farmers cheese
1/2 cup sour cream
1 egg
2 tbsp butter
2 tbsp sugar
1/2 cup flour
1/2 tsp vanilla extract

Pass cheese through a meat grinder or through a sieve, put into a mixing bowl,  add 1/4 cup of sifted flour, sugar, salt, vanilla extract, egg. Mix everything well, then put onto a table sprinkled with flour ad roll cheese mix into a thick log. Cut log across into 10 equal size patties.  Coat each patty in flour, and fry in an oil in a hot skillet in batches until nicely browned on each side. Put finished tvorozhniki on a serving plate. If desired — sprinkle with powdered sugar. Serve hot with sour cream of fruit syrup.
