Syrniki with Potatoes (Cheese and Potato Pancakes)


500 g/1 lb 2 oz farmers cheese
800 g/l lb 13 oz potatoes
1 egg
3 tbsp sugar
1/2 cup sour cream
1 cup flour
3 tbsp butter

Peel potatoes and cook them whole in salted water. Drain cooked potatoes in a colander, put them into a bowl and mash thoroughly. Mix mashed potatoes with cheese, add egg, 1/2 cup flour, sugar, salt. Mix everything well, put on a table sprinkled with flour, form patties, coat them in flour and brown on both sides in hot oil. Serve hot with cold sour cream.

Syrniki can also be cooked with raisins. Add 50 g/2 oz picked over and washed raisins to the cheese mix.
