Cod with Potatoes and Onions


750 g/1 lb 12 oz cod
2 onions
800 g/1 lb 14 oz potatoes
300 g/12 oz tomatoes
1 tbsp vinegar
4 tbsp butter

Lightly fry in butter peeled, washed, thinly sliced onions. Add prepared, seasoned with salt pieces of fish to the frying pan, top with slices of tomatoes, add 3-4 tbsp of water, season tomatoes with salt and pepper. Put slices of fried potatoes around pieces of fish and sprinkle with melted butter. Cover the frying pan and put into a heated oven. for 20-30 minutes. Sprinkle with finely chopped parsley leaves and vinegar just before serving.

Flounder, pike, or eel could be used instead of cod in this recipe.
