Syrniki with Carrots (Farmers Cheese Pancakes)

Ingredients:

120 g farmers cheese
30 g all-purpose flour
1/2 egg
15 g sugar
15 g dried apricots
20 g carrots
10 g butter
30 g sour cream

Braise grated carrots with 5 g of butter and a small quantity of water until all the water evaporates, then cool them. Finely chop dried apricots. Rub farmers cheese through a sieve and mix with half of the flour, a little of sour cream, sugar, egg, dried apricots, and braised carrots. Mix everything well, shape 3 patties, coat patties in flour and put them in a ovenproof skillet, pour sour cream on top, and bake in a preheated oven until cooked.

Egg White Omelet with Vegetables

Ingredients:

3 egg whites
30 g sour cream
40 g milk
10 g butter
30 g green cabbage
30 g zucchini
10 g lettuce
5 g parsley leaves

Cook shredded cabbage, zucchini, and lettuce with butter and 20 g of milk until cooked, then transfer the vegetables into a buttered mold, and top with egg whites mixed with 20 g of milk and remaining sour cream. Bake in a preheated oven.

Omelet with Cauliflower

Ingredients:

200 g cauliflower
5 g butter
2 egg whites
50 g milk
30 g sour cream

Blanch cauliflower in salted water, separate into florettes; then put florettes into a small buttered skillet, pour egg whites mixed with milk over them, top with sour cream, and bake until cooked. Serve in the skillet in which it was cooked.

Dried Apricots, Rutabaga, and Farmers Cheese Pudding

Ingredients:

75 g rutabaga
50 g dried apricots
50 g farmers cheese
1 egg white
30 g milk
10 g butter
10 g sugar
10 g farina
30 g sour cream

Julienne rutabaga and braise it with 5 g of butter and milk until soft, then add farina, sugar, and soaked and finely diced apricots. Mix everything well and let it cook, then add farmers cheese rubbed through a sieve and whipped egg white, mix again, transfer into a buttered mold, sprinkle with melted butter and bake in a preheated oven. Serve with sour cream.

Steamed Farmers Cheese Souffle with Cherry Sauce

Ingredients:

120 g farmers cheese
10 g farina
10 g butter
15 g sugar
1/2 egg
25 g dried cherries
5 g potato starch

Make porridge from farina and 30 g (1 oz) of water and cool it down. Rub farmers cheese through a sieve, add cooked porridge, egg yolk, 5 g sugar and 5 g melted butter. Mix everything well, then accurately fold in whipped egg whites. Transfer mixture into buttered molds, and steam until cooked. Make kissel from cherries, 100 g of water, 10 g of sugar, and potato starch. Pour it over souffle and serve.

Farmers Cheese with Fresh Greens

Ingredients:

500 g / 1 lb 2 oz farmers cheese
1 cup sour cream
100 g lettuce or spinach
2 tbsp sugar

Wash and drain salad or spinach leaves. Dry with clean towel and finely chop. Add salt and sugar to farmers cheese, mix and pass through meat grinder or rub through sieve. Mix cheese with chopped greens and serve on big plate or serving plates, in a shape of a mound. In the center of the mound, make a cavity and fill it with cold sour cream. Decorate edges of the plate with lettuce leaves or parsley.

Instead of lettuce, finely chopped dill, parsley or radish leaves may be used. Use no more than 50g / 2 oz of greens.
