Whipped Berry Cream

Ingredients:

1 cup heavy cream
3/4 cups powdered sugar
1/2 cup berries
10 g/ 0.4 oz gelatin

Pick over fresh or frozen berries (wild strawberries, raspberries), wash in cold water and rub through a sieve. Mix berry puree with powdered sugar. Pour heavy cream into a pot on an ice bath and whip with a whisk until stiff picks hold. Fold berry puree into the whipped cream, then, while mixing all the time, in a thin stream pour in dissolved gelatin. Transfer whipped cream into molds and chill.

Whipped Vanilla, Chocolate, or Coffee Cream

Ingredients:

1 cup heavy cream
1/3 cups powdered sugar
10 g/ 0.4 oz gelatin
1/2 tsp vanilla extract

Pour heavy cream into a pot, and put the pot into an ice bath. Whip the cream until stiff peaks are just about to form. Continue whipping while gradually adding powdered sugar until stiff peaks form, add vanilla extract and then, in a thin stream — dissolved gelatin. Transfer whipped cream into molds and chill.

Chocolate and coffee creams are made using the same procedure. Mix 1 tbsp of cocoa powder with powdered sugar for chocolate cream. Mix gelatin with 1/4 cup of strong coffee made from 2 tsp of ground coffee for coffee cream.

Whipped Sour Cream

Ingredients:

1 cup sour cream
1/2 cup powdered sugar
10 g/ 0.4 oz gelatin
1/2 tsp vanilla extract

Put sour cream into a pot, add sugar and vanilla extract, put the pot into an ice bath and whip it with a whisk until it doubles in volume. Gradually add dissolved gelatin to the whipped sour cream, mixing all the time, instantly transfer into molds or dessert bowls and chill.

Whipped sour cream can be flavored with fresh berry puree — wild strawberry, strawberry, or raspberry. Pick berries over, wash in cold water and rub through a sieve, then mix with whipped sour cream before adding gelatin.

Whipped Cream

Soak gelatin for 20-25 minutes in cold water, then squeeze it out, and dissolve in 1/4 cup of boiling water. Meanwhile, pour heavy cream into a pot and put the pot into an ice bath. Whip the cream with a whisk until thick foam forms — it should hold its shape. Gradually add powdered sugar to the whipped cream, mixing all the time, add vanilla extract, and then pour in dissolved warm gelatin.
