Vareniki with Farmers Cheese (Dumplings with Cheese)


500 g/1 lb 2 oz farmers cheese
3/4 cup sour cream
2 eggs
2 cups all-purpose flour
2 tbsp sugar
2 tbsp butter

Add 1 egg and 3/4 tsp salt to 1/2 cup of cold water or milk and mix everything together. Add 2 cups of sifted flour and make a stiff dough. Pass cheese through a meat grinder, add sugar, egg yolk, 1 tbsp melted butter , 1/2 tsp salt and mix everything well. Roll the dough thinly, cut circular shapes using a glass or a cookie cutter, moisten circles of dough with beaten egg white,  put 1 tsp of cheese stuffing in a middle of a circle and crimp sides together .

10 minutes before serving put dumplings into salted boiling water and cook until they float to the top. Take them out with a skimmer, put into a serving bowl, pour melted butter over and serve with sour cream or fruit sauce.

Wheat Flour or Farina Dumplings in Butter


1 cup farina or all-purpose flour
5 eggs
1/2 tsp salt
4 tbsp butter

Bring 3 1/2 cup of water to boil, add salt and 1 tbsp of butter, then add farina or flour and cook for 6-8 minutes constantly stirring. Remove dough from heat and add eggs, one at a time, mixing well to incorporate.

Make dumpling from the dough and cook in boiling, lightly salted water, for 5-7 minutes. Remove dumpling from the pot with a skimmer and put into colander to drain. Put drained dumpling on a serving plate, drizzle with melted butter and serve.

Instead of butter dumplings could be dressed with sour cream. If using sour cream — take 1 tbsp of butter to make the dough and 1/2 cup of sour cream for serving.


Dumplings are made from wheat flour, farina (cream of wheat), or oat flour.

To form dumplings take dough with a tablespoon and press it against a side of the pan. With a teaspoon dipped into hot water separate pieces of dough from the contents of the tablespoon and put them into boiling salted water. Dumplings should have somewhat oblong shape and be of somewhat uniform size.

Dumplings in butter, breadcrumbs, and sour cream are served as a stand-alone dish, or can be served as a garnish to meat dishes. Dumplings in milk could be served as a second course or as a dessert.
