Feta Cheese Dumplings


1 cups all-purpose flour
100 g/4 oz feta cheese
1 egg
1/3 cups milk
1/2 cup sour cream
2 tbsp butter

Rub fresh and not very salty feta cheese through a sieve, put into a mixing bowl, add milk, flour, 1 tbsp melted butter, egg, and mix everything together. Continue mixing until the dough is smooth, at which moment cover it with a moist towel and leave to rest for 1 hour. Roll the dough out on a surface sprinkled with flour to 1/2 cm (1/4″) thickness, cut it into strips 2 cm (~1″) wide, and cut each strip into small pieces.

Cook dumplings in a boiling salted water until they float to the top. Remove from a pot with a skimmer and let drain. Lightly fry dumplings in butter in a hot skillet. Serve hot with sour cream or butter on a side.
