500 g / 1lb 2 oz fish
1/4 cup milk
2 tbsp flour
2 tbsp butter
Cut cleaned and washed fish along the backbone, cut into slices across and submerge into salted milk for 2-3 minutes. Coat in flour or breadcrumbs and lay out on a greased frying pan skin side up. Brush with melted butter and put in an oven. After 5 minutes the skin will start to get browned/caramelized. Filet is ready in 6-7 minutes, pieces with bone – in 12 minutes.
Serve in frying pan or on heated plate, pouring in butter from frying pan. Garnish with boiled or fried potatoes, cucumbers, lettuce.
Fish prepared in this fashion can be served cold with cucumbers, tomatoes, marinated fruit.
