Fried Ham with Tomatoes

Ingredients:

500 g/1 lb 2 oz ham
400 g/14 oz tomatoes
1 tsp lemon juice
3 tbsp oil

Fry sliced ham in oil in a preheated skillet. In a separate pot or skillet fried washed, cut across in half, seasoned with salt and pepper tomatoes. Put fried tomatoes on top of slices of fried ham, sprinkle with finely chopped dill or parsley leaves, and serve in a skillet ham was fried in. Drizzle with lemon juice just before serving.

Ham with Peas

Ingredients:

500 g/1 lb 2 oz smoked ham
1 carrot
1 parsnip
1 onion
1 can green peas
or 100 g/4 oz dried peas
1/2 tbsp sugar
1 tbsp butter

Wash smoked ham with cold water and cook following instructions of “Boiled Salt Beef” recipe. Just before serving remove the skin from the ham, slice meat thinly, put it on a plate and pour 2-3 tbsp of strained cooking liquid over it. Garnish with green peas dressed with butter.

Boiled ham can also be used in this recipe. About 3-5 minutes before serving put slices of ham into hot water or meat broth and warm though without bringing to boil. Besides green peas, boiled ham can also be garnished with spinach, sorrel, or potato puree, braised cabbage or canned corn.
