Crouton Pancakes

Ingredients:

3 tbsp croutons
3/4 cup water
1/2 tsp yeast
1 tsp butter
1/2 egg

Crush or pass croutons through a meat grinder and pour over with hot water, add yeast, and put in warm place for two hours. When dough rises, add egg and mix; then pour dough onto hot greased skilled with a spoon, and fry like regular dough pancakes.

Cabbage Pancakes

Ingredients:

200 g / 7 oz cabbage
1/2 egg
1 tsp breadcrumbs
2 tsp butter
1 tbsp sour cream
1/4 cup milk

Wash, cut and braise cabbage in milk (1/4 cup), until it becomes soft. Pass braised cabbage through a meat grinder, add salt, mix with raw egg and breadcrumbs and place in the shape of pancakes onto a hot skillet with butter.
Serve with sour cream.

Pancakes with Apples

Ingredients:

500 g / 1 lb 2 oz flour
2 cups milk or water
2 eggs
2 tbsp butter
1 tbsp sugar
1/2 tsp salt
25 g / 1 oz yeast
3-4 apples

Dilute yeast in warm milk or warm water, add butter, eggs, sugar, salt, thoroughly mix and gradually pour in flour. Cover with towel and put in a warm place to rise.

Peel apples and remove the core, then thinly slice. Before baking, put apple slices in prepared dough that has risen. Mix and fry pancakes on a skillet with heated butter, adding dough with a spoon moistened in water.

Pancakes with Pumpkin, Squash or Carrots

Ingredients:

1 kg / 2 lb 3 oz flour

1 kg / 2 lb 3 oz vegetables

2 eggs

1-2 tbsp sugar

2 tbsp vinegar

1 1/2 tsp salt

1/2 tsp baking soda

2 tbsp butter

Peel fresh vegetables (pumpkin, squash or carrots), slice and boil in a small quantity of water; pass boiled vegetables through a meat grinder or rub through a sieve. Break eggs into this vegetable puree without letting it cool, add salt, vinegar, flour mixed with soda, punch it down. Bake pancakes on a hot skillet.

Pancakes

Ingredients:

500 g/1 lb 2 oz all-purpose flour
2 cups milk or water
2 eggs
1 1/2 tbsp sugar
3-4 tbsp shortening (butter or vegetable oil)
1/2 tsp salt
25 g/1 oz fresh yeast

Dissolve yeast in warm milk, add flour and make dough. let it rise in a warm place, then add eggs, salt, sugar and 1 tbsp of shortening, mix well, then leave to rise for the second time. Without mixing it after the second rise, take portions of dough with a spoon dipped in water and fry on both sides in butter in a preheated skillet.

Serve with sugar, honey, preserves, jam, or farmers cheese with sour cream and sugar.

Pancakes can be made with apples or raisins. Instructions for making pancakes with apples will be described in a separate recipe. For pancakes with raisins — pick raisins carefully over, thoroughly wash, and add to the dough.
