500 g/1 lb 2 oz apples or pears
3/4 cups sugar
Cut peeled apples into 6-8 slices and remove the core. To make sure that peeled apples do not become dark — put them into water slightly acidulated with lemon acid. Add sugar to a pot, then add 2 cups of hot water, add apples, bring to boil, and simmer 10-15 minutes (depending on the breed of apples), until apples become soft.
If desired – add lemon or orange zest, or a some cinnamon to compote.
Fresh pear compote is cooked using the same procedure; however, use less sugar (depending on sweetness of pears). Cook compote 10-15 minutes. If pears are too ripe — it is sufficient to just bring compote to boil. Cool compote before serving.
