Boiled Meat in Sweet and Sour Sauce

Ingredients:

150 g beef
5 g butter
30 g sour cream
5 g wheat flour
10 g raisins
15 g prunes
25 g apples
5 g dill
100 g vegetable broth

Boil lean and tender mean and cut it in 2 pieces. Make sauce from flour, sour cream and vegetable broth (see appropriate recipe). Soak raisins and prunes in cold water.
At the same time, chop apples and prunes. Put butter into a pan, pour in some water, add meat and then fruit on top. Cover with lid and braise for 5 minutes, then pour over with sauce and braise for another 10-15 minutes. Before serving, pour over with chopped greens.

Milk Soup with Pumpkin and Farina

350 g milk
100 g pumpkin
25 g farina
15 g sugar
10 g butter
100 g water

Peel pumpkin, cut into small slices and braise with water until ready, then rub through a sieve together with liquid. At the same time, boil milk and cook farina in it for 10 minutes. Combine with pumpkin and add sugar. Serve with butter.

Okroshka with Fruit Infusion

Ingredients:

100g fresh cucumbers
10 g lettuce
5 g parsley
60 g potatoes
5 g dill
1 egg
50 g sour cream
5 g sugar
5 g lemon juice
400 g fruit infusion

Dice fresh cucumbers and potatoes (boiled with skin, then cooled and peeled). Finely chop lettuce, parsley, dill. Hard boil an egg, chop the white, rub the yolk through a sieve and mix with sour cream. Pour everything over with fruit infusion, add vegetables, greens, sugar and lemon acid.
In order to make fruit infusion, take 100 g apples or 25 g dried fruit, pour over with 2 cups of boiling water, boil and let it infuse under a lid for 3-4 hours.
Instead of fruit 100g rhubarb or 20 g dog rose may be used.

Sour Milk Cream

Ingredients:

100 g sour milk
25 g sour cream
25 g sugar
20 g milk
3 g gelatin
1/4 egg yolk
0.1 g cinnamon

Beat egg yolk with sugar, mix in soaked gelatin and boiled milk, and warm the mixture up until gelatin dissolves and it slightly thickens. Strain and add cinnamon to the mixture. Whip sour cream and sour milk into foam and gradually add it to the jello mixture, mix well, pour into a mold and chill.

Syrniki with Carrots (Farmers Cheese Pancakes)

Ingredients:

120 g farmers cheese
30 g all-purpose flour
1/2 egg
15 g sugar
15 g dried apricots
20 g carrots
10 g butter
30 g sour cream

Braise grated carrots with 5 g of butter and a small quantity of water until all the water evaporates, then cool them. Finely chop dried apricots. Rub farmers cheese through a sieve and mix with half of the flour, a little of sour cream, sugar, egg, dried apricots, and braised carrots. Mix everything well, shape 3 patties, coat patties in flour and put them in a ovenproof skillet, pour sour cream on top, and bake in a preheated oven until cooked.

Egg White Omelet with Vegetables

Ingredients:

3 egg whites
30 g sour cream
40 g milk
10 g butter
30 g green cabbage
30 g zucchini
10 g lettuce
5 g parsley leaves

Cook shredded cabbage, zucchini, and lettuce with butter and 20 g of milk until cooked, then transfer the vegetables into a buttered mold, and top with egg whites mixed with 20 g of milk and remaining sour cream. Bake in a preheated oven.

Rice Pilaf with Fruits and Vegetables

Ingredients:

50 g rice
15 g raisins
25 g prunes
30 g carrots
40 g cauliflower
15 g butter
100 g water

Add picked over and washed rice into boiling water, add sugar and butter, return to boil and cook until done on a water bath. Transfer cooked rice to a skillet, add washed raisins, prunes, braised carrots and boiled cauliflower, cover the skillet and cook on low heat for about an hour.
