Chopped Schnitzel

Ingredients:

500 g / 1 lb 2 oz meat
1/2 cup breadcrumbs
2 tbsp butter

Wash meat and remove tendons. Pass through a meat grinder or chop with knife, add salt pepper and make 5-6 oval-shaped schnitzels about 1/2 cm / 0.2 in thick.

Coat prepared schnitzels in breadcrumbs and fry on hot skillet with butter for 5-6 minutes. Serve fried potatoes, mashed potatoes or vegetables for garnish. Pour over schnitzel with butter.

Schnitzel

Ingredients:

500 g / 1 lb 2 oz pork or veal

1 egg

1/2 cup breadcrumbs

1/2 tbsp capers

1/2 lemon

2 tbsp butter

Wash pork or veal (kidney part of loin or flesh of the hind leg), remove tendons, cut into chops, but without bone. Pound each piece with meat mallet, salt, sprinkle with pepper, moisten with whipped egg and coat with breadcrumbs. Put prepared pieces on a heated skillet with butter and fry on both sides until caramelized crust forms; then put on a plate and pour over with butter that was used to lightly fry finely chopped and scalded lemon zest and capers.

Put a slice of lemon sprinkled with parsley or dill on each piece. Garnish can be fried potatoes or vegetables with oil. Serve green or vegetable salad separately.
