Berry Sorbet


500 g/1 lb 2 oz berries
1 1/2 cups sugar
2 cups water

Wash picked over berries (fresh or frozen wild strawberries, raspberries) in cold water, rub through a sieve into a ceramic bowl. Put sugar into a pot, add water and bring to boil. Cool the syrup down, mix it with berry puree and put into a bowl of ice cream maker. Freeze berry sorbet following directions from “Vanilla Ice Cream” recipe.
