Sour Milk Cream

Ingredients:

100 g sour milk
25 g sour cream
25 g sugar
20 g milk
3 g gelatin
1/4 egg yolk
0.1 g cinnamon

Beat egg yolk with sugar, mix in soaked gelatin and boiled milk, and warm the mixture up until gelatin dissolves and it slightly thickens. Strain and add cinnamon to the mixture. Whip sour cream and sour milk into foam and gradually add it to the jello mixture, mix well, pour into a mold and chill.

Syrniki with Carrots (Farmers Cheese Pancakes)

Ingredients:

120 g farmers cheese
30 g all-purpose flour
1/2 egg
15 g sugar
15 g dried apricots
20 g carrots
10 g butter
30 g sour cream

Braise grated carrots with 5 g of butter and a small quantity of water until all the water evaporates, then cool them. Finely chop dried apricots. Rub farmers cheese through a sieve and mix with half of the flour, a little of sour cream, sugar, egg, dried apricots, and braised carrots. Mix everything well, shape 3 patties, coat patties in flour and put them in a ovenproof skillet, pour sour cream on top, and bake in a preheated oven until cooked.

Egg White Omelet with Vegetables

Ingredients:

3 egg whites
30 g sour cream
40 g milk
10 g butter
30 g green cabbage
30 g zucchini
10 g lettuce
5 g parsley leaves

Cook shredded cabbage, zucchini, and lettuce with butter and 20 g of milk until cooked, then transfer the vegetables into a buttered mold, and top with egg whites mixed with 20 g of milk and remaining sour cream. Bake in a preheated oven.

Rice Pilaf with Fruits and Vegetables

Ingredients:

50 g rice
15 g raisins
25 g prunes
30 g carrots
40 g cauliflower
15 g butter
100 g water

Add picked over and washed rice into boiling water, add sugar and butter, return to boil and cook until done on a water bath. Transfer cooked rice to a skillet, add washed raisins, prunes, braised carrots and boiled cauliflower, cover the skillet and cook on low heat for about an hour.

Tomato and Apple Salad with Sour Cream Dressing

Ingredients:

100 g tomatoes
100 g apples
40 g sour cream
10 g parsley leaves

Slice ripe and hard tomatoes and peeled and cored apples. Lay alternating slices of apples and tomatoes on a serving plate, pour sour cream over salad and decorate with parsley leaves.

Omelet with Cauliflower

Ingredients:

200 g cauliflower
5 g butter
2 egg whites
50 g milk
30 g sour cream

Blanch cauliflower in salted water, separate into florettes; then put florettes into a small buttered skillet, pour egg whites mixed with milk over them, top with sour cream, and bake until cooked. Serve in the skillet in which it was cooked.

Turnip Stuffed with Rice and Apples

Ingredients:

150 g turnips
20 g rice
50 g apples
10 g sugar
1/2 egg
5 g flour
50 g milk
10 g butter

Peel and boil turnip until cooked. Meanwhile make milk sauce with flour, butter, and milk. Remove some of the inside of the turnip to give it a shape of a cup, and stuff with boiled rice mixed with grated apples, sugar, butter, and egg. Pour milk sauce over turnip and bake until browned. Drizzle with butter before serving.

Toasts with Vegetables

Ingredients:

60 g wheat bread
75 g milk
1/4 egg
5 g sugar
15 g butter
30 g sour cream
75 g green cabbage
50 g carrots
50 g zucchini
50 g apples
5 g lettuce leaves
5 g dill

Cut bread into 2 slices, dip in 50 g of milk mixed with sugar and egg, and bake until lightly browned. Meanwhile, shred cabbage and peeled zucchini and braise them with 25 g of milk and 10 g of butter. Separately braise thinly sliced carrots. Mix cooked vegetables with grated apples, finely-chopped lettuce and dill, top toasts with vegetable mixture, smooth the top, drizzle with melted butter and brown in the oven. Serve with sour cream.
