Cold Beet Soup (Svekolnik)


150 g / beets
50 g / sour cream
10 g / sugar
1 egg white
75 g / fresh cucumbers
10 g / lettuce
15 g / scallions
5 g / parsley
5 g / dill
300 g / beet broth
lemon acid as desired

Wash beets, boil in water with lemon acid until ready, then cool, peel beet and strain the broth. Chop beet and combine with broth, add sugar, chopped boiled egg white, chopped lettuce and scallions, finely chopped cucumbers and sour cream. Before serving, sprinkle with chopped beets.
You may also put diced potatoes into svekolnik as well as peeled fresh apples.
