Vareniki with Farmers Cheese (Dumplings with Cheese)


500 g/1 lb 2 oz farmers cheese
3/4 cup sour cream
2 eggs
2 cups all-purpose flour
2 tbsp sugar
2 tbsp butter

Add 1 egg and 3/4 tsp salt to 1/2 cup of cold water or milk and mix everything together. Add 2 cups of sifted flour and make a stiff dough. Pass cheese through a meat grinder, add sugar, egg yolk, 1 tbsp melted butter , 1/2 tsp salt and mix everything well. Roll the dough thinly, cut circular shapes using a glass or a cookie cutter, moisten circles of dough with beaten egg white,  put 1 tsp of cheese stuffing in a middle of a circle and crimp sides together .

10 minutes before serving put dumplings into salted boiling water and cook until they float to the top. Take them out with a skimmer, put into a serving bowl, pour melted butter over and serve with sour cream or fruit sauce.
